One of the most famous is Momi, a poker bistro that has gathered and practiced all the awareness gained in Hagakure restaurants. Momi is different from conventional pokerias: all dishes respond to precise taste logic and preparation techniques capable of emphasizing the quality of the raw material and the genuineness of the final product. 

In addition, Momi is characterized by its leaner format than its competitors, accessible target, and innate vocation to the takeaway and delivery world. "We don't just assemble ingredients in a bowl but interpret poké-style dishes," Del Giglio points out. Indeed, the best-selling culinary creation is the Octopus Bowl with octopus gallega, kimuchi mayonnaise, xo sauce, sweet potato chips, red potato cubes, spring onion, basil, lime, avocado, sesame, togarashi, and a drizzle of EVO oil. 

"In the MOMI format, Delivery, whether handled in-house or through food delivery partners, makes up about 40 percent of sales."

Streamlined processes thanks to Deliverect

The Hagakure Group has been offering a delivery service since 2012. Their second restaurant was established to meet the growing demand for takeout and delivery. Before relying on Deliverect, the restaurant was experiencing recurring issues. Group founder Vincenzo Del Giglio pointed out the number of orders required creating an order entry station with a dedicated resource.

"In a format like Momi, the margin for human error was very high, and it was not infrequent that we would get orders wrong and then have to give post-sale assistance to customers," Del Giglio points out. Thanks to Deliverect, this margin has been reduced by more than 90 percent. 

Today, most processes are more streamlined, and the order entry operator can optimize process and manage order flow and availability through Deliverect's dashboard. Ultimately, the adoption of Deliverect has helped improve the overall operations and efficiency of the delivery strategy.

The importance of online ordering

One of Deliverect's most appreciated features is online ordering, i.e., integration with major online delivery platforms. In a nutshell, you can easily create a customizable web page that you will use to manage all your restaurant(s) orders. Hagakure tested it for taking takeout orders from a summer kiosk.

"Customers don't wait in line. Orders come directly to the checkout, they get paid online, and availability is always up to date."

Before the end of 2022, Hagakure will open a fourth Momi store in Turin and launch a new Mexican street food project. Also planned for 2023 is opening at least five restaurants, Momi, and two Mexican-format locations, plus implementing virtual kitchens to meet new market demands.
